Meal Plans

I'm going to list some considerations here for the days we'll need to have a meal or two. The plan is to have a couple volunteers to be responsible for each meal. Whether that is a family or a few people that bring different things to the meal. Realize that if you take responsibility for a main meal (a dinner) be sure you'll have the supplies to go with it (ie a cookout will need charcoal, lighter fluid, lighter, etc). Be specific in what you plan to bring/buy so that others can volunteer to contribute. There is a Piggly Wiggly and a gas station/gift shop on the island but the comments on the Edisto Beach forum have stated it's expensive (as it's the only grocery store around). You many want to bring the supplies/food from home, if possible, rather than buy it there. But we'll let you decide for your meal contribution...
Here are the suggestions so far (feel free to change it up/offer something different)
Generally speaking: Thurs night - Pizza Fri - Meatless Day Sat night - Cookout Sun - out by 10 am

Thursday dinner - Mom & Dad will furnish Pizza. Need sides ie salad, drinks

Friday Brkfast, lunch, dinner - Mac & Cheese, grilled cheese & soup, clam chowder, grilled fish, veg/fruit tray, salad, and drinks (these were just some ideas of meatless dishes for the day)

Saturday Brkfast, lunch, dinner - cookout for dinner (hamburger, hotdogs, buns, chicken), condiments, side dishes, drinks [Matt has volunteered to be the cook and David R can assist if Matt says so :-) ]

Breakfast suggestion: everyone bring a box of their favorite cereal. If anyone is interested in preparing a brkfast ie eggs, sausage, pancakes, waffles, casserole, etc please pick a morning and bring your supplies

Lunch suggestion: Left overs, PB& J, cold cuts - although we'll still need volunteers to be responsible for the food/prep

General Supplies: butter/salt/pepper/sugar/milk/creamer/coffee (reg & decaf)/iced tea (or lemonade)/juice/paper towels/napkins/paper plates/plastic cups/smores (we have the sticks)/foil/saran wrap/zip lock bags/garbage bags/dish soap, etc. A couple people to bring a cooler for the beach would be good. We can get ice at the store.

We'll need water jugs to be filled on the island and/or bottled water. The tap water has a bad taste for most people (like well-water).

  1. So this is a little overwhelming! I had to take notes when reading the posts!!!!

    Saturday morning:I can do waffles, bacon, sausage and biscuits. I DO NOT do eggs so if someone wants to add eggs or something else to it that would work.

    Lunches:We can bring peanut butter, jelly,cheese (for grilled cheese), and bread to have to make sandwiches. I will also pick up different bags of chips and drinks to have.

    Do we have a blender there? I am going to have Jimmy one night make everyone chocolate milkshakes-he makes the best! He won't be happy about it though:)

    As for sides for dinner, I am still thinking about them. Can't wait to see everyone!

  2. I will plan on doing a breakfast bake on one of the mornings, it can't be friday though due to sausage and bacon in it. I will pick all the stuff up there. Probably Sunday morning, its easy to just bake and serve.
    I hope Courtney will make her wild rice dish, it is fantastic!
    I can bring the chinese noodle salad for a side if you want me to.

  4. Megan & Diane - Breakfst Sat & Sun sounds delicious!
    Diane - the chinese noodle salad will be a good side dish to the Sat cookout (we just used your recipe this weekend and it turned out great)

    Remember we'll really only be there 2 full days so don't plan to bring/buy a ton of food for your meal prep. There's plenty of us to eat, I know, but we won't have a lot of time to finish up the leftovers.

    I think I may have to create a separate spreadsheet to keep track of all the food that everyone is volunteering. I'll send that out by email the week before we try to leave so we all know what is going on. Like I said, if anything is needed we'll buy it there.

  5. Okay! We're here I promise...spring break did me in last week, so just now sitting down at a computer. I can bring handle dinner on Friday night, I'll do a couple lasagnas (without meat of course) and salad and bread.
    Diana, the Wild Rice will be there just for you! That keeps for a couple days, so it will be good all weekend.
    what else...we'll bring some drinks of course...I'll get several boxes of Capri Suns for the kids to take to the beach or whatever.
    Megan, I'll bring my waffle iron too so we can have a couple going Saturday morning.
    We have boogie boards and some beach toys we'll bring...I'll look around and see what else we can round up!

  7. I have a can of Iced, Green Tea mix. Plan to pack a couple lounge/beach chairs if I can fit them, and I know Mom and Dad will pack whatever camp chairs that may fit once the van is packed. Of course, I'll bring any and all sun block and aloe lotion that we have here! If we need it, I have an additional double/Queen air mattress I can bring.

    I'll help Diane with the Sat cookout food/supplies and I'm hoping Britt will come up with a brilliant but simple culinary delight for our enjoyment! You hear that Brittany?! I'm counting on you :-)

  9. We'll bring plastic plates, utensils, dish soap and sponges, ketchup, mustard and relish for the cookout. Also, we can bring a salad for Friday night.

  10. After talking with Mom, she's added paper towels to her laundry basket and Dad will pack the Beach Canopy for a little sun shade if needed.

    We're in great shape! I have the spreadsheet ready for an initial view so I'll email that to everyone tonight so you can have a look-see. Hope everyone is able to find room for a few clothes after packing up all these goodies! I added a small section in the lower corner of the spreadsheet that lists items we may still need but we can always get them once we arrive.

    Mom will have a Spiritual Activity for Thur night and Annie volunteered for an activity on Friday. So anyone interested in preparing an activity for Saturday, let me know. Again, just a 10-15 minute activity.

I will bring a set of knives for anything that will need it and if we want to throw some chicken in an oven? im assuming there is a reliable oven, then we can make caesar and buffalo chicken wraps for one of the lunches. Dont forget we will also need cleaning supplies, spices needed, bowls, and utensils to cook with. I have an entire kitchen in my room let me know if there is anything else I need to bring if any of you run out of space in the car, I cant promise I will check this regularly. Brittany
